- 1/2 head of purple cabbage
- 4 carrots
- 1/2 red pepper, chopped
- 2 thin green onions, chopped
- 1/4 red onion, chopped
- 1/4 bunch cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1 Tbs. ginger
- 1 clove of garlic
- 1/2 cup sunflower seeds
- 1/4 cup raw unsweetened shredded coconut
- 2 Tbs. flax seed oil
- 1 fresh squeezed lemon juice
- Sea salt and pepper
Process the cabbage and carrots using a small grater blade on a food processor.
Chop the remaining vegetables and herbs and mix together with above ingredients in a large bowl.
Add flax seed oil and lemon juice
Mix in sunflower seeds and coconut.
