Protein Pancakes


Anna and Shakira came up with this recipe after a workout, and not only is it a crowd-pleaser, it’s something you can easily adapt to the seasons or your liking. Here’s the original recipe they came up with, followed by a few variations.

Blueberry Protein Pancakes w/ Strawberry Compote

1/2 cup blueberries
1/2 medium banana (optional)
1/2 cup oats
1 scoop Previnex Vegan Protein Powder
3 egg whites
3 tbsp milk or water
1 tsp baking powder

Grind the oats in the blender until you create a fine flour. Add everything except the blueberries and mix until smooth and creamy. Heat the skillet and pour out the batter for each pancake. Drop blueberries into each circle and flip when ready.

Berry Compote

1.5 cups of fresh berries (we used strawberries/blueberries)
1/2 cup water
2 tbsp stevia
1tsp corn starch or arrowroot

Mix all the ingredients together in a blender until smooth. Heat a small saucepan to medium temperature and add mixture to pan. Bring to a small boil and then simmer until reaching desired consistency, making sure to stir frequently. (About 10-15min)


Seasonal changes: Use frozen berries when fresh berries are out of  season, or swap diced apples or pears (or both!) for the berries.

Pumpkin Spice: replace the banana with 1/4 cup pumpkin puree, add a pinch of cinnamon, nutmeg, and ground clove.

Chocolate: add unsweetened chocolate chips, or unsweetened cacao powder.
