Anna Kaiser’s Tomato Sauce

Anna is constantly being asked what she eats. She recently gave Elle a peek into what a typical day looks like. She mentioned this tomato sauce she likes to make, and now we’re sharing the recipe. It’s pictured above with cauliflower rice and poached salmon, but you can use it SO many different ways (top zucchini noodles with it, cook meatballs in it, make a healthier version of eggplant parmesan. Get creative!). It’s easy to make, super healthy, and keeps well in the fridge — making nutritious weeknight meals just got a lot easier.

Anna Kaiser’s Tomato Sauce

6 Roma tomatoes

4 large carrots

1 clove garlic

2 tbsp tomato paste

2 tsp salt

1/2 cup Vidalia onion, chopped

1. 1 packet stevia (optional)  Add all ingredients to a blender (a vitamin, or comparable high-powered blender works best), and blend until completely smooth.

2. Pour mixture into a pan, cook over medium heat for 40 minutes, stirring occasionally.
